The Design Specialist supports the successful delivery of the Pollo Campero restaurant opening and remodel plan through site specific development and execution of feasibility sketches, test fits, sightline renderings, and construction drawing review according to brand standards, state/local jurisdiction requirements, and best practices gathered through internal collaboration. This role will adapt prototypical conditions into prototypical and non-prototypical sites for restaurant projects in the pipeline and will develop repeatable models as needed to drive workflow efficiency and to promote the consistency of the brand standards. This role is a part of a team of internal and external design professionals and project managers who manage the complete restaurant design process through all phases.
80% · Produce and deploy CAD (REVIT as needed) preliminary site plans, floorplans, elevations for ground up and tenant finish out projects in an efficient manner according to brand and regulatory standards within the process turnaround time. · Review preliminary project information from the in-house Development and Real Estate team to include landlord and local requirements. Assess other conditions as applicable. · Collaborates with internal and external cross functional partners to deliver projects to brand standard or those in test. This role will be expected to develop expert knowledge in brand image, operation, IT, QA, and related functions. · Problem solves to protect project pipeline goals and to accurately represent the brand in all new stores based on current prototype. · Report project status through database.
· Create realistic renderings and 3D models to present proposed restaurant design to include signage plan.
· Review construction documents to verify alignment with brand standards, design intent, and to minimize field change orders. · Field construction related RFI and design related support needs. · Review and approve signage and interior art package layouts from vendor.
· Provides creative direction to architects and franchisees in case of custom or unique site conditions concerning either overall site planning, interior layouts, or image for conversions of existing buildings and other non-traditional projects.
· Develop unique design solutions to challenges in space planning, construction details, material selection and branded storefronts. Subject Matter Expert in the stated discipline supporting current technical needs and requirements to the overall development program assuring best in class design.
· Support special project deliverables as needed.
20% · Support the change management and continuous improvement efforts of the prototype drawings and supporting design standards. Participate in prototype drawing modification when needed. · Support the management and dissemination of change bulletins, field directives, and design communication documents. · Tracks architectural design changes and modifications for impact on the store development budget. · Reports on progress and uses analytics, lessons learned, and best practices from prior projects to re-inject learnings into Design Standards. · Collaborates with external team of consultants to share and train prototype and brand standard updates and best practices.
· Collaborates closely with the Design team and Procurement to select and manage FF&E. · Communicates with vendors and consultants as applicable. · Review and approve shop drawings and/or physical samples from vendors (i.e., millwork, furniture, materials, artwork, and graphics) as needed
· Be an active contributor on the design team to collaborate on new standards, regional expansion strategies, art programs, and prototype updates as driven by Design leadership.
· Identify opportunities to elevate the brand image, enhance the guest experience, leverage innovation, and improve processes.
